Welcome to Serra’s Kitchen

My name is Serra, I live on a farm in the heart of Southland and I have a love of food and cooking. I am a huge advocate for healthy eating using natural, fresh ingredients to bring out the amazing tastes different foods have.

I cater to outside functions from weddings to small dinner parties and everything in between. I also run cooking schools in my home including “Eating to Live well” and “Men and Meat” to name a couple.

My newest venture is to bring to you healthy, convenient, pre-cooked meals in a bag that takes all the work away from you. It allows you to use every minute of the day however you please and still eat like you have spent hours in the kitchen. Boil-in-Bag came out of feeding athletes in a race called Godzone, arguably one of the toughest multisport races on the planet. The brief was to provide healthy, delicious meals, packed with energy and ready to eat immediately.

I’m lucky to have friends in the right places, as Robert and Lynda Erskine run an Australian business supplying equipment into some of the world’s best restaurants. I now have a kitchen packed with equipment usually only found in specialised places. These include a steam-injected oven, Pacojet, Sous Vide, MyCook and a  Blast Chiller to name a few. These machines, together with years of cooking experience, allow me to bring you these wonderful dishes that taste like you have just created them yourself. All meals have NO preservatives, many are gluten free, and all have the freshness and taste locked in via the blast chilling and freezing technology. This also allows a substantial shelf life in both the frozen and chilled forms.

Born from “Godzone” one of the toughest and most gruelling races on the planet, comes a meal solution called Boil-in-Bag. Needing a meal that was tasty, easy to eat, quick to prepare and packed with wholesome energy, Serra’s Kitchen developed Boil-in-Bag. It is quite simply as the name suggests - a tasty, wholesome meal, delivered in a bag that is heated through to eating temperature via immersing in boiling water (for 30 minutes from frozen or 10 mins from thawed). This can then be eaten straight out of the bag as the Godzone participants did or transferred to a plate for a more gourmet touch at home.

 

Serra’s Kitchen uses food preparation technologies including steam infusion, sous vide, blast freezing and vacuum packing so you can be confident that each meal is packed with great taste and all the goodness that comes with the freshest of ingredients.

 

Just as the Boil-in-Bag meals are perfect for athletes in a hurry, they are also a great option for the working person without enough hours in the day to prepare the healthy meals needed for high productivity. Or maybe it’s the chef of the households’ rostered day off after a day on the slopes. Any time when taste and goodness trumps presentation, Boil-in-Bag, is a great option to deliver a quick and easy meal for those that deserve a break.
